A callback to Wildflower's 2019 St Phoebe, aged 12 months in ex-wine French oak then macerated and refermented on NSW-grown raspberries for two months. Organic red wheat and heritage barley are fermented entirely by yeasts and bacteria collected from native NSW flowers. Bottled with raw Blue Mountains polyflora honey from Warré hives.
