A wild ale aged 15 months in ex-wine French oak, then blended at bottling with Picon Bière, the French amaro made to be mixed into beer. Organic red wheat and heritage barley are fermented entirely by yeasts and bacteria collected from native NSW flowers, and the beer went into bottle with no additional dosage. Bitter orange and gentian from the amaro sit over the dry, oak-framed base.
