Rosé de Gambrinus is two year old lambic macerated with fresh raspberries at 200 grams per litre, then refermented in the bottle. The fruit sugars ferment out, leaving a dry, deep pink beer with raspberry aroma rather than raspberry sweetness. It is at its most fruit-forward while young.
