Gueuze is Cantillon's assemblage of lambics of different ages, bottled without added sugar and refermented in the bottle to build its own carbonation. The young lambic carries the sugars for that second fermentation while the older casks bring the depth and the oak. Dry, firmly acidic and lightly woody.
