A collaboration between 3 Fonteinen and Brussels-based Brasserie de la Senne, Wilde Terf began as a local wheat beer brewed with heritage Pajottenland wheat varieties, half of which aged for three years in oak lambic barrels before being blended 55/45 with young 3 Fonteinen lambic in November 2023. The result is a lively, layered wild ale with bright acidity, subtle oak tannins, and a refined spontaneous-fermentation funk. Unfiltered and unpasteurized, it is both an ode to the Brabant countryside and a testament to the deep agricultural roots shared by the two breweries.
