An organic Druif from 3 Fonteinen and Château La Baronne: traditional lambik macerated on Carignan, Grenache Noir and Syrah grapes from the Languedoc. Blend 30 of season 23|24 saw whole grapes from Domaine La Baronne macerate on young lambik in oak for over five months before blending with three-year-old lambik. 352 grams of grapes per litre and a weighted average age of more than 23 months. Vinous, tannic and vividly sour, with all grains sourced organically through the cereal collective.
